Pork Tenderloin Vegetable Noodle Stir Fry
Pork Noodle Stir Fry is a flavorful and nutritious dish combining tender pork slices, colorful vegetables, and soft noodles all stirred up in a delicious sauce. This quick and easy recipe is perfect for weeknight meals or family gatherings, offering a balance of protein, vegetables and carbohydrates.
Ingredients
- 300 gms of pork tenderloin, thinly sliced
- 200 gms of egg noodles
- 2 tbls of vegetable oil
- 1 red bell pepper, thinly sliced
- 1 yellow bell pepper, thinly sliced
- 2 medium-sized carrots, thinly sliced
- 2 cloves of garlic, minced
- 1 onion, chopped
- 2 tbls of soy sauce
- 1 tablespoon of Hoisin sauce
- 1 tablespoon of oyster sauce
- 2 spring onions, sliced
- salt and pepper to taste

Directions
Cook the egg noodles according to package instructions. Drain and set aside.
Heat 1 tablespoon of vegetable oil in a wok or large skillet over medium heat.
Add the pork slices and stir-fry until browned and cooked through. Remove from the wok and set aside.
In the same wok, add another tablespoon of oil. Sauté the garlic and onion until fragrant.
Add the bell peppers and carrots to the wok, and stir-fry for about 2-3 minutes until they are tender.
Return the pork to the wok, add the cooked noodles. Pour in the soy sauce, hoisin sauce, and oyster sauce. Stir well to combine all the ingredients.
Season with salt and pepper as desired.
Stir in the spring onions during the last couple of minutes of cooking.
