Perfect Easy Honey Roasted Carrots
This classic side dish is always a hit in my home.
Ingredients
- 1 lb Of carrots
- 2 tbls of olive oil
- 2 tbls of honey
- salt to taste
- Black pepper to taste
- 2 tbls of fresh parsley, chopped

Directions
Firstly, preheat your oven to 400 degrees F (200 degrees C). This is the perfect temperature to get a nice color on your carrots and to make them tender.
Peel the carrots and evenly cut them into 2-inch pieces. Uniform sizes will ensure even cooking.
In a mixing bowl, combine the carrots, olive oil, honey, salt, and pepper. As a tip, mix with your hands to properly coat the carrots.
Spread the coated carrots evenly on a baking sheet. Make sure not to crowd the baking sheet; there should be space between the pieces to achieve a nice, even roast.
Roast the carrots in the preheated oven for 25 to 30 minutes, opening midway to turn the carrots for even browning. They should come out golden and slightly caramelized.
Lastly, garnish your roasted carrots with freshly chopped parsley for a pop of color and additional flavor.
