Old-Fashioned Fried Mashed Potato Cakes

Ingredients
- 4 large potatoes, peeled and boiled
- 2 large eggs
- 1 Cup all-purpose flour
- 1⁄2 Cup cheddar cheese, grated
- 2 tbls fresh parsley, finely chopped
- salt and pepper to taste
- 2 tbls olive oil

Directions
Mash boiled potatoes in a large bowl until smooth.
Add eggs, flour, cheddar cheese, parsley, salt, and pepper to the mashed potatoes. Mix everything together until well combined.
Divide this mixture into 12 equal parts and shape them into round cakes.
Heat the olive oil in a large non-stick frying pan over medium heat.
Place the potato cakes in the frying pan and cook for about 5 minutes on each side until golden brown and crispy.
Remove from the pan and drain on paper towels.
Serve the potato cakes warm with your favorite sauce or dip.
