New Year's Eve Lentil Soup
This lentil soup is rich, nourishing, and easy to prepare. Traditionally, lentils are believed to bring luck, therefore it is especially recommended on New Year's Eve.
Ingredients
Soup
- 300 g lentils
- 100 g carrot
- 100 g celery
- 1 pc red onion
- 2 clove garlic
- 1 tapped ek marjoram
- 2 l water
- 1 pc bay leaf
- 1 moka spoon ground black pepper
Condition
- 100 g Sausage or bacon
- 2 pc Oat bread
- 1 tapped ek paprika

Directions
Soak the lentils the day before, then rinse them.
Peel the vegetables and cut them into small cubes. Chop the onions finely.
Slice the sausage or bacon and fry it in a larger pot. Add the onion and sauté until translucent.
Put the vegetables, garlic, lentils, marjoram, bay leaf and pepper into a pot. Add enough water to cover it and bring it to a boil.
Simmer the soup on low heat until the lentils are tender, about 30-40 minutes.
In the meantime, toast the pieces of bread and sprinkle them with paprika.
Serve the soup with toasted bread cubes, and serve it warm.
