New Year's Eve Cake with Cookie Base
A delicious and simple New Year's Eve cake to make your New Year's Eve party a special event. This recipe includes a soft cookie base, filled with a fluffy cream and fruit filling. A perfect end to your New Year's Eve menu!
Ingredients
For the cookie base
- 200 g cookies
- 100 g butter
For the filling
- 500 ml whipped cream
- 200 g white chocolate
- 500 g mixed berries
- 2 Packages gelatin
- 4 tbsp sugar
For the decoration
- 1 Pack Sugar icing
- 1 Pack Sugar pearls

Directions
To prepare the New Year's Eve cake, first prepare the biscuit base: Crumble the biscuits in a food processor or with a rolling pin. Melt the butter and mix it with the biscuit crumbs. Press the mixture evenly into the bottom of a springform pan and chill.
Prepare the filling: Melt the chocolate and let it cool down. Whip the cream until stiff. Prepare the gelatin according to the instructions on the package. Mix the chocolate with the cream and then add the berries. Dissolve the sugar in the gelatin and add it to the cream-berry mixture. Mix everything well.
Assemble the cake: Place the filling on the cookie base in the mold. Put the cake in the refrigerator for at least 2 hours.
Decorating the cake: Once the cake has set, you can decorate it with icing and sugar pearls. Now your New Year's Eve cake is ready to be served. Enjoy your meal!
