Directions
First, clean the mushrooms and cut them into slices. If they are small, you can leave them whole, which will add character to the sauce.
Fry the chopped onion and garlic in olive oil until the onion starts to turn golden. It is important not to burn the garlic, so add it after the onions. Add the mushrooms and sauté them until they start to release their juices.
Once the mushrooms start to release their juices, it is important not to spill them, as they will give the sauce a stronger flavour. Then add the cooking cream, season with salt and pepper to taste and let the sauce simmer over a low heat for about 10 minutes.
Meanwhile, cook the pasta according to the instructions on the package. I personally prefer penne, but you can choose any pasta you like.
When the pasta is cooked, add it to the sauce and stir to combine the pasta with the sauce.
Serve hot, sprinkled with grated parmesan cheese.
