Light Grated Curd Cake
Many of you probably know the grated curd cake. But what about adding a little twist to this classic cake. Instead of a cocoa dough, use a light one, add fruit and moreover make it in a somewhat healthier version.

- 150 g Smooth spelt flour
- 100 g Of whole grain spelt flour
- 100 g blanched almonds

- 500 g lumpy curd cheese

- 2 egg whites
- 30 g Vanilla protein or sweetener
- 1 tablespoon creamy powder with vanilla flavoring for the preparation of creams and fillings
- 15 g Flavdrops sweetener
- 1 pcs vanilla sugar
- vanilla aroma
- Strawberries and blueberries

Directions
Mix the ingredients for the dough and knead it. We can do it the classic way, by hand. Once prepared, put it aside for at least half an hour in the freezer.
Whip the egg whites for the filling. Mix Golden Spike and protein in some water. Then mix all the ingredients for the filling.
Divide the cooled dough into 2 parts.
On a baking sheet lined with baking paper, coarsely grate one part of the dough.
We'll put the filling in it.
We store fruit on the filling.
Grate the remaining part of the dough on top.
I sprinkled the top with almond slices.
Bake at 170 degrees for about 45 minutes.
