Ingredients
Sauce
- 1 tablespoon almond flour
- 3 tbls water
- 2 tablespoon tamari
- 2 tbls oyster sauce
- 2 tbls sesame oil
- 2 tbls Chinese cooking wine
- 1 teaspoon artificial sweetener
Filling
- 2 cloves garlic
- 1⁄2 teaspoon ginger
- 500 g pork mince
- 1 small onion
- 1 carrot
- 100 g canned water chestnuts
- 10 snowpeas
- 10 mushroom
Serving
- 8 large Lettuce leaves
- Crushed peanuts
- 2 shallots

Heat the peanut oil in a large pan over high heat. Add onion, garlic and ginger, stir for a minute then add the pork mince. Cook the pork until it turns white.
Add all the vegetables and sauce. Stir. Add the almond flour stir and simmer and cook for 7-10 minutes or until the vegetables are softened and the sauce has thickened.
Place the filling into a serving bowl. Lay out lettuce leaves, peanuts, and shallots on the side.
To serve, spoon some filling into a lettuce leaf. Top with peanuts and scallions, roll it up and it is ready to eat.
