Indian masala chai
Masala chai is more than just a drink - it's a little ritual that sweetens my everyday life. I got to know and love this blend of sensual spices and warming milk on my trip through northern India. Try it out and be surprised by a very special taste experience!
Ingredients
- 1 l water
- 4 black tea
- 4 cardamom pods
- 2 cinnamon sticks
- 4 Cloves
- 2 star anise
- 2 cm fresh ginger
- 500 ml whole milk
- 4 Tablespoon sugar

Directions
To prepare masala chai, start by preparing the spices. Lightly pound the cardamom in a mortar so that the aromas can develop better. Break the cinnamon sticks and star anise. Peel and chop the ginger. Do the same with the cloves, simply crush them lightly to create the full aroma.
Put all the spices in a pan with the water and bring to the boil. Now you have enough time to look forward to the wonderful aroma slowly spreading through your kitchen.
After the water has boiled for 10 minutes, you can add the black tea bags. I prefer black tea because it creates a strong base that blends wonderfully with the spices.
Now comes the part you've been waiting for: add the milk. Bring the mixture to the boil again and simmer for a further 5 minutes.
Finally, you can flavor the chai with sugar according to your own sweetness preference. If you like, you can also use honey.
Strain the mixture through a sieve and pour it into your favorite cups. Voilà! You have your own homemade masala chai.
