- 2 egg
- 11⁄3 cups sugar
- 2 spoon vanilla essence
- 3 cups grated zucchini
- 3⁄4 Cup unsalted butter
- 23⁄4 cups All Purpose Flour
- 2 spoon baking soda
- 2 spoon cinnamon
- 1 spoon ground ginger
- 1⁄2 spoon nutmeg
- 1⁄4 spoon Kosher salt
- 1 Cup walnuts
- 1 Cup raisins or dried cranberries

Directions
In a large bowl, beat the eggs. Mix in the sugar and vanilla extract. Stir in the grated zucchini and the melted butter.

In a separate bowl, mix together the flour, baking soda, baking powder, cinnamon, ground ginger, nutmeg, and salt.
