1. Step

Separate the pork rib from the bone. Put the bone in a pot of boiling water. When it changes colour, remove it and wash it in cold water.

2. Step

Place in a pot with water the pork rib bone, leek, crushed garlic, slices of ginger, onion and carrot. Add salt. Simmer for 1 hour.

3. Step

Brown the boneless pork rib in a frying pan on both sides. Once browned, add to the pan and leave for 10 minutes.

4. Step

Boil the 2 eggs in water with a dash of vinegar. Leave for 6 minutes in total. Cool and peel.

5. Step

Put the soy sauce, mirin, sugar and sake in a separate pot. Add the crushed garlic clove, ginger slice and reserved leek leaf. Bring to a simmer and turn off the heat when it comes to a boil.

6. Step

Marinate the pork and the whole, peeled eggs in this sauce. At least 1/2 hour.

7. Step

Cook the pasta as indicated on the packet.

8. Step

Place 3-4 tablespoons of the soy sauce from the marinade on the plate. Add the noodle portion in the centre and soup stock to fill half of the dish. Place the pork, cut into thin strips, on one side. On the other side, a cracked egg. Drizzle with the finely chopped green onion and chamfer. Enjoy!
