How to make Birthday Mermaid Cake
This Mermaid Cake is perfect for any occasion and will transport you to a magical world under the sea. A vanilla cake infused with subtle hints of blueberry and topped with a creamy lavender frosting, and decorated with edible seashells sure to impress your guests and leave them feeling enchanted.
Ingredients
For the cake:
- 2 cups all-purpose flour
- 3 cups sugar
- 3 teaspoons baking soda
- 1 teaspoon salt
- 1⁄2 Cup unsalted butter, at room temperature
- 1 Cup milk
- 2 teaspoons vanilla extract
- 3 eggs
- 2 cups blueberries
For the frosting
- 1 Cup unsalted butter, at room temperature
- 4 cups powdered sugar
- 2 tbls whole milk
- 1 teaspoon vanilla extract
- 1⁄4 teaspoon lavender extract
- food coloring (blue and purple)
For the decoration:
- Edible seashells and pearls
- Gold leaf (optional)

Directions
Preheat the oven to 350°F (175°C). Grease and flour two 8-inch round cake pans.
In a medium bowl, whisk together the flour, sugar, baking powder, and salt.
Add the butter, milk, and vanilla extract to the bowl of a stand mixer and beat on high speed until creamy.
4 Gradually add flour mixture to the wet ingredients, alternating with the egg whites, mixing on low speed.
Gently fold in the crushed blueberries with a spatula.
Divide the batter evenly between the two prepared cake pans.
Bake for 25-30 minutes or until a toothpick inserted into the center of the cake comes out clean.
Allow the cakes to cool on racks.
While cooling, make the frosting by beating butter in a stand mixer until creamy.
Add powdered sugar, milk, vanilla extract, and lavender extract one at a time, beating until mixed.
Divide the frosting into bowls - leave one vanilla, add blue food coloring to one and purple to the third.
Once the cakes have cooled, place one cake layer onto a cake stand or plate and cover the layer with frosting.
Put the second cake layer on top of the first one and frost the entire cake with the frosting.
Pipe rosettes from various shades of blue and purple around the bottom and top edges of the cake.
Decorate the cake with edible seashells and pearls and gold leaf desired.
