- 11⁄2 tablespoon sesame paste
- 21⁄2 tablespoon soy sauce
- 2 tablespoon white vinegar
- 1 tablespoon sesame oil
- 2 tablespoon sugar
- 1⁄2 tablespoon chili paste optional
- 2 tablespoon hot water
- 4 cloves garlic
- 25 g Enoki mushrooms
- 125 g tofu skin

1. Step
Dilute the sesame paste in hot water. Add soy sauce, white vinegar, sugar, and sesame oil. Mix till smooth. Press and mince the garlic. Add to the bowl and mix. This is our salad dressing.

Cut the tofu skin vertically, making stripes about 5 mm wide.

Break the stripes apart into long noodles.

Remove the roots from the mushrooms, tear them into pieces and add to the bowl with the tofu noodles. Soak them in boiling water for 5-10 minutes.
