Cake layer

Ice cream layer

  • 1 litre vanilla ice cream Added to
  • 2 cups fruit Cake mix Added to
  • Rum or sherry or brandy or tea for soaking Added to

Toppings

  • 12 Cup pecan Added to

1. Step

In a bowl, place the fruit cake mix with alcohol or tea, citrus zest and juice of 2 oranges and 1 lemon. Mix well, cover and leave to soak overnight.

2. Step

Beat the butter, sugar and vanilla until creamy, then beat in the eggs one by one. Tip in the flour, mixed spice, soaked dried fruit and any liquid from the bowl and nuts.

3. Step

Stir everything together, and pour it into the cake pan. Make a slight dent in the centre of the mixture and bake for 1 hour in a preheated oven to 160°C.

4. Step

Reduce the heat to 140°C, cover the top of the cake with a double sheet of foil and bake for another 30 minutes.

5. Step

Cool in the baking pan, then lift out and wrap in baking paper. Keep in a cake pan with a lid in a cool and dark place overnight.

6. Step

Soak the festive fruit mix overnight in enough alcohol or tea and completely cover the mix.

7. Step

Mix the ice cream in the 2 cups of soaked festive fruit mix.

8. Step

Line the same-sized round cake pan with plastic wrap before pressing the ice cream into the cake tin. Then, place it into the freezer for at least an hour.

9. Step

When the cake layer is completely cooled, place it on a plate and top it with the ice cream layer.

10. Step

Drizzle with melted chocolate and caramel and crumble with nuts and chocolate chunks. Serve immediately and enjoy!
