How to cook Perfect Chicken Risotto Recipe

Ingredients
- 2 chicken breasts, diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 Cup Arborio rice
- 4 cups chicken stock
- 1⁄2 Cup white wine
- 2 tbls olive oil
- salt and pepper to taste
- 1 Cup parmesan
- 2 tbls Chopped fresh parsley

Start by heating the olive oil in a large pan over medium heat. Add the chicken breasts, season with salt and pepper, and cook until they turn golden brown. Remove the chicken from the pan and set aside.
Add the chopped onion to the same pan and sauté until soft and translucent. Add the minced garlic and cook for another minute.
Stir in the arborio rice, toast for about 2 minutes. Pour in the white wine and keep stirring until it gets absorbed by the rice.
Start adding the chicken stock, one cup at a time. Make sure each cup is fully absorbed before adding the next. Keep stirring throughout this process; this will take about 20 minutes.
Return the cooked chicken to the pan and stir well to combine with the risotto. The rice should be creamy yet al dente.
Turn off the heat, stir in the grated Parmesan cheese until it melts completely.
Garnish with fresh parsley before serving.
