Homemade Silky Dark Chocolate Caramel Sauce

- 1 Cup crystal sugar
- 1⁄4 Cup water
- 3⁄4 Cup heavy cream
- 31⁄2 ounces dark chocolate, chopped
- 3 tbls unsalted butter
- 1⁄2 teaspoon sea salt

Directions
In a medium-sized saucepan, mix the sugar and water together. Cook over medium heat until sugar completely dissolves.
Continue cooking the sugar mixture without stirring until it reaches a hypnotizing amber color, this process takes about 10-15 minutes.
Remove the saucepan from the heat, and slowly whisk in the heavy cream. The mixture will bubble up energetically, but continue whisking until it calms down.
Add chopped dark chocolate to the mix, whisking until it fully melts and integrates.
Stir in the chunks of unsalted butter, whisking until you have a homogenous, silky sauce.
To finish off, add the sea salt and mix.
Let the sauce cool and thicken up a bit before using it. It can be stored, covered, in the fridge for up to one week.
