Homemade chicken soup
There is nothing like a warm and delicious chicken soup to ease the symptoms of a nasty cold. This recipe has been refined through the years and has been a hit every time someone in my family has been sick. The aromatic spices and savory chicken combined with the healing power of the soup are nothing short of magical.
Ingredients
- 1 whole Chicken
- 2 Onions
- 3 carrots
- 3 Rods celery
- 3 whole cloves of garlic
- salt and pepper
- 1 bunch parsley
- 2 Piece Bay leaves
- 2 l water

Directions
To recreate the chicken soup recipe first place the chicken in a large pot and cover with the water. Slowly bring to a boil to get a clear broth. It is important that the water does not boil too much to avoid clouding the broth.
While the chicken is cooking, prepare the vegetables. Peel and coarsely chop the onions, carrots and celery. Crush the garlic cloves.
Once the chicken is cooked, foam and fat will appear on the surface and should be skimmed off to achieve a clear broth. My experience has shown that this step is crucial for the quality of the soup.
Add the vegetables, garlic, bay leaves, salt and pepper to the pot. Let the soup simmer for about 1.5 hours until the chicken is cooked.
When the chicken is cooked, remove from the pot and let cool slightly. Continue to simmer the rest of the soup.
Debone the chicken and cut the meat into bite-sized pieces. My recommendation is to add the meat loosely, as it helps make the soup more filling.
Return the chicken to the pot, add the parsley and simmer for about 10 minutes. Season with salt and pepper if needed.
Chicken soup is now ready to enjoy. The perfect food for cold autumn days and when you have a cold.
