High-protein cookies
This recipe for high-protein cookies is a dream for any fitness enthusiast or just people who want to meet their protein needs in a delicious way! I've made them many times for post-workout treats and they are an absolute hit. They're not too sweet, and the protein powder gives them an extra texture that works perfectly with the oats and nuts. With a dash of milk, they are simply irresistible.
Ingredients
- 120 g Oats
- 100 g Protein powder (vanilla or chocolate)
- 2 mature bananas
- 50 g Mixed nuts (optional)
- 30 ml milk
- 2 Eggs
- 1 Pinch salt
- 1 TL baking soda

To bake the protein cookies, first preheat the oven to 175°C. I recommend using the fan function to ensure even heat distribution.
Mash the bananas in a large bowl. I have found that this works best when the bananas are very ripe, as they are then easier to mash and have more natural sweetness.
Add the protein powder, oats, eggs, baking powder and a pinch of salt to the bowl. Mix everything well until you have a fairly homogeneous mixture.
Chop the nuts and add them to the dough. You can use any kind of nuts you like - I personally love the combination of almonds and walnuts.
Add the milk slowly until the dough has a good consistency - it should not be too runny, but still easy to shape.
Using a spoon or your hands, shape about 12 cookies onto a baking tray lined with baking paper. The cookies should not be too thin, otherwise they could become too dry.
Bake the protein cookies for about 15 minutes, they should be golden brown. Leave them to cool on the tray for about 5 minutes before transferring them to a wire rack.
