Hearty Goulash Soup New Year's Eve

A hearty and spicy goulash soup that is perfect for getting through New Year's Eve or fighting the hangover on New Year's Day. It is rich in flavors of paprika, thyme, marjoram and bay leaves and is prepared with potatoes, carrots and of course beef.

1. Step

Step 1: For the goulash soup, fry the beef in a large frying pan with 2 tablespoons of oil until it is brown. Then remove from the pan and set aside.

2. Step

Step 2: Add the onions and garlic to the pan and sauté until they are soft.

3. Step

Step 3: Add the carrots, bell peppers, and potatoes and continue to fry until lightly browned.

4. Step

Step 4: Add the tomato paste and spices and stir to mix all the ingredients.

5. Step

Step 5: Add the broth, bring to a boil and reduce the heat. Simmer for 90 minutes.

6. Step

Step 6: Return the beef to the pan and simmer for another 30 minutes until the meat is tender.

7. Step

Step 7: Season the goulash soup for New Year's Eve with salt and pepper, and serve hot.
