Healthy Mediterranean Gnocchi Vegan Salad
Vegan Mediterranean Gnocchi Salad is a light yet satisfying plant-based meal. This dish combines the fluffy and tender gnocchi with an assortment of vibrant vegetables and a zesty dressing redolent with Mediterranean flavors. It's perfect for your next BBQ, potluck, or as a simple, healthy lunch.
Ingredients
- 1 lb of vegan gnocchi
- 1 Cup of cherry tomatoes, halved
- 1 red bell pepper, diced
- 1 cucumber, diced
- 1⁄2 Cup of Kalamata olives, pitted and sliced
- 1⁄2 Cup of red onion, finely chopped
- 1⁄4 Cup of fresh basil leaves, chopped
- 3 tbls of olive oil
- juice from one lemon
- 2 cloves garlic, minced
- salt and pepper to taste

Directions
Cook the gnocchi according to the package instructions. Once done, drain and rinse under cold water to cool. Set aside.
In a large bowl, combine the cherry tomatoes, red bell pepper, cucumber, Kalamata olives, red onion, and fresh basil.
In a separate smaller bowl, whisk together the olive oil, lemon juice, minced garlic, salt, and pepper to create the dressing.
Pour the dressing over the vegetable mix, and stir until everything is well coated.
Add the cooled gnocchi to the bowl, and gently stir it in until it's coated with the dressing and mixed evenly with the vegetables.
Let the salad sit for a few minutes so the flavors can meld together. Serve immediately, or refrigerate for a chilled option.
