This lovely Fresh Pear Salad is a perfect choice for a light lunch or a refreshing side dish.

Start by preparing the vinaigrette. In a small bowl, whisk together the olive oil, apple cider vinegar, and honey until they're well mixed. My experience has taught me that using good quality extra virgin olive oil and raw organic honey significantly enhances the flavor of the vinaigrette.
Season with salt and freshly ground black pepper to your preference, remembering that the blue cheese will add saltiness to the salad.
After your vinaigrette is mixed, set it aside to let the flavors meld together.
