Fluffy and delicious banana muffins
Everyone loves muffins, they are delicious and healthy. While there are many recipes out there, banana muffins are one of the yummiest. This recipe contains no eggs or dairy, making it suitable for vegans, as well as being much more nutritious and fluffy.

- 1 ripe bananas
- 4 tablespoon brown sugar
- 4 tablespoon vegetable oil or almond oil or olive oil
- 70 ml vegetable milk
- 80 g wheat flour or wholemeal flour or oat flour
- 1 teaspoon baking powder or baker's yeast
- 40 g corn starch
- 40 g nuts

1. Step
Peel a banana and mash to a puree.
2. Step
Add the sugar, vegetable oil and vegetable milk.
3. Step
Whisk until you have a homogeneous mixture.
4. Step
Add the flour, corn starch and baking powder.
5. Step
Whisk again until the ingredients are fully integrated.

Chop nuts and add to the mixture.

Serve in silicone moulds.

Add a slice of banana and some chopped nuts

Bake in the oven at 180° for 15 minutes. Remove the muffins from the oven and leave to cool.
