Fast Pasta with Garlic & Fresh Spinach
This Pasta with Spinach dish is a simple, wholesome delight that combines the delightful chew of pasta with the nutrient-rich freshness of spinach. Garnished with zesty garlic, flavorful olive oil, and tangy parmesan, it’s an easy-to-make, incredibly satisfying meal that can be brought together in well under an hour.
Ingredients
- 250 gms of your favorite pasta
- 2 tbls of olive oil
- 2 cloves garlic, finely chopped
- 300 gms of fresh spinach
- 1⁄2 Cup of grated Parmesan cheese
- salt to taste
- Pepper to taste

Directions
Cook the pasta according to the package instructions until it's al dente. Drain and set aside, but retain around a cup of the pasta water for later use.
Heat the olive oil in a large pan over medium heat. Add the chopped garlic and sauté until it turns a light golden color.
Add the fresh spinach to the pan. Cook it until it starts to wilt, which should take about 4 minutes. Stir occasionally. Add a little salt and pepper to the mixture.
Once the spinach has wilted, stir in the previously cooked pasta. Mix well to ensure everything is evenly combined.
Gradually sprinkle the grated parmesan cheese into the pan and stir it through the pasta and spinach combination.
If the pasta looks a little dry, add a dash of the retained pasta water. Continue to cook the pasta for another 2 minutes, ensuring all the flavors meld together brilliantly.
Remove your pan from the heat, let the pasta rest for a short while, then serve hot, garnished with a sprinkle of parmesan and a dash of pepper.
