Exquisite veal rib
This recipe for Baked Beef Short Ribs is one of my favorites for its simplicity and sublime flavor. The ribs are incredibly juicy and full of flavor, thanks to the spices and slow cooking. I assure you that it will delight everyone at the table, including the pickiest eaters.
Ingredients
- 11⁄2 kg Of veal ribs
- salt to taste
- Pepper to taste
- 3 clove garlic
- 1 cdta of sweet paprika
- 1 cdta thyme
- 50 ml of olive oil
- 250 ml of white wine
- 500 ml of beef broth

Start by preheating the oven to 150 degrees Celsius. Take the ribs out of the refrigerator and let them rest for about 10 minutes to reach room temperature.
Meanwhile, crush the garlic in a mortar with the salt until it forms a paste. Add the paprika, thyme and olive oil. This aromatic mixture will make our ribs exceptional.
With the resulting paste, rub the beef ribs well on both sides. Be generous with this step, as it is what will give the ribs that outlined flavor.
Place the ribs in a baking dish and pour in the white wine and beef broth. The combination of these liquids will help the ribs stay juicy and acquire a unique flavor during cooking in the oven.
Bake for 2 hours at 150°C, turning them every 30 minutes. If you see that they run out of liquid, add more broth. The key to good ribs is slow and steady cooking.
Once the ribs are cooked, increase the temperature to 200°C and bake for 10 more minutes to brown them. This last step is my secret to get that crispy texture on the outside and juicy on the inside.
