- 8 ounces penne pasta
- 1 tablespoon olive oil
- 1 small onion, chopped
- 2 cloves of garlic, minced
- 1 paprika
- 1 zucchini,
- 1 Cup sliced mushrooms
- 1 Cup spinach
- 1 can tomatoes
- 1 Cup tomato sauce
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- salt and pepper to taste
- 1 Cup mozzarella cheese
- 1⁄4 Cup parmesan

Directions
Preheat your oven to 375°F (190°C) and grease a 9x13-inch baking dish.
Cook the pasta according to the package instructions until al dente. Set aside.
In a large skillet, heat the olive oil on medium heat. Add onion and garlic, and sauté until fragrant and translucent.
Add bell pepper, zucchini, mushrooms, and spinach to the skillet. Cook until the vegetables have softened, about 5 minutes.
Stir in the diced tomatoes, tomato sauce, dried basil, dried oregano, salt, and pepper. Simmer.
In the prepared dish, combine the cooked pasta with the vegetable and tomato mixture. Mix well to ensure the pasta is coated evenly.
Sprinkle the shredded mozzarella and grated Parmesan cheese evenly over the pasta.
Cover baking dish with foil and bake in preheated oven for 20 minutes. Then, remove the foil and bake until the cheese is melted and bubbly and golden.
Once baked, remove the pasta bake from the oven and let it rest for a few minutes before serving.
