- 2 tablespoon coconut oil
- 1 diced onion
- 1 diced pepper
- 2 cloves garlic chopped
- 1 tablespoon grated ginger
- 1 tablespoon ground cumin
- 1 teaspoon garam masala
- 1 teaspoon ground coriander
- 1⁄4 teaspoon cayenne pepper
- 400 g chopped tomatoes
- 400 ml coconut milk
- 100 g green lentils
- 400 g chickpeas
- 100 g baby spinach
- 1 lemon juice

1. Step
Melt the coconut oil, and start frying the onion, pepper, garlic, and ginger. Also add all the spices and mix. After a while, add the chopped tomatoes.

Once it starts bubbling, add coconut milk, lentils, and chickpeas. Cook for 25 minutes.

Add the spinach and cook for just another minute or so. Add lemon juice, mix well, and you're done! Serve with rice and enjoy.
