Temper the tahini. Chop the pistachios. Line the baking tin with greaseproof paper.

Place the agave in a non-stick frying pan and place over medium-low heat. Stir until caramelise it. Then, cook for a further 3 minutes.

Add the caramel immediately to the tahini and mix with a spatula until everything is integrated.

Transfer to the chosen mould, spread evenly and add the chopped pistachios on top.
