Easy homemade Passion Fruit Cheesecake

Ingredients
Filling
- 450 g firm cream cheese
- 500 ml milk cream
- 250 g passion fruit pulp without seeds
- 400 g condensed milk
- 15 g unflavoured gelatine
- 100 ml water
Base
- 250 g vanilla biscuits
- 150 g butter
Gelatine
- 150 g passion fruit pulp with seeds
- 225 ml water
- 100 g sugar
- 15 g unflavoured gelatine

Directions
Blend the biscuits and add melted butter. Then, shape the base in a mould.
Boil the passion fruit pulp.
In a bowl, beat the cream cheese and condensed milk.
Add the hydrated and melted gelatine to the microwave.
Whip the cream to medium-stiff peaks and fold it into the mixture with a spatula.
Pour the filling over the base and place it in the freezer for 2 hours.
Place the passion fruit pulp for the topping, sugar and water in a saucepan. Cook until the sugar dissolves.
Remove large pieces of the pulp with a fork. Stir in the hydrated and melted gelatine.
Place on the cake and freeze until the gelatine has set.
Serve and enjoy!
