Easy homemade Chipolatas and roasted vegetables

Ingredients
- 4 Chipolatas
- 2 carrots
- 1 zucchini
- 400 g potatoes
- 1 red onion
- Herbes de Provence

Directions
Preheat the oven to 200°C. Wash and peel the carrots. Remove the ends, cut the carrots in half lengthwise and then in three.
Wash and remove the ends from the zucchini. Cut it in half lengthwise and then into pieces.
Wash the potatoes and cut them into small pieces.
Peel and cut the red onion in half and then into quarters.
On a baking sheet covered with baking paper, place: carrots, zucchini, potatoes and red onion. Add a good drizzle of olive oil and the herbes de Provence. Add salt and pepper and mix well.
Arrange the chipolatas on top and bake for 45 minutes at 200°C.
Take the dish out of the oven and serve. It's ready!
