Easy Fresh Mexican Chicken Burrito Bowl
This Chicken Burrito Bowl is a quick and easy meal that's packed with flavors. Spiced chicken, sautéed peppers, and Mexican-flavored rice serve up a healthier option to a burrito and promises a fulfilling meal. Best of all, it can be personalized according to your own preferred toppings.
Ingredients
- 2 boneless skinless chicken breasts
- 1 tablespoon olive oil
- 1 teaspoon cumin
- 1 teaspoon garlic powder
- 1⁄2 teaspoon chili powder
- 2 cups cooked rice
- 1 can black beans, drained and rinsed
- 1 Cup sweet corn
- 1 Cup diced tomatoes
- 1 Cup shredded lettuce
- 1⁄4 Cup Shredded cheese
- 1⁄4 Cup sour cream
- salt and pepper to taste
- Lime wedges and chopped coriander for garnish

Directions
Season the chicken breasts with cumin, garlic powder, chili powder, and salt & pepper.
Heat the olive oil in a skillet over medium heat. Once the oil is hot, add the chicken breasts and cook for about 7-8 minutes each side, or until they’re no longer pink in the middle. Remove from heat, let them cool for a couple of minutes, then slice them into strips.
While the chicken is being cooked, prepare the rice according to the package instructions.
Assemble your chicken burrito bowl: Divide the cooked rice among 4 bowls. Top each with the equal amounts of sliced chicken, black beans, corn, tomatoes, and shredded lettuce.
Sprinkle shredded cheese on each bowl and add a dollop of sour cream on top.
Garnish with lime wedges and chopped coriander, serve, and enjoy!
