Easy Fluffy Okonomiyaki Japanese Pancakes
These fluffy pancakes are a popular Japanese dish, also known as Okonomiyaki. They're made with a combination of shredded cabbage, meat or seafood, and a batter that holds together. The toppings are up to you, but traditional garnishes include mayonnaise, soy sauce, and green onions.
Ingredients
- 2 cups of all-purpose flour
- 2 teaspoons of baking powder
- 1⁄2 teaspoon of salt
- 2 tbls of sugar
- 2 eggs
- 1⁄2 Cup of milk
- 1⁄2 Cup of water
- 4 cups of shredded cabbage
- 2 green onions, sliced
- 1 Cup of cooked, diced meat (pork or chicken) or seafood (such as shrimp or squid)
- Vegetable oil for frying

Directions
In a large mixing bowl, whisk together the flour, baking powder, salt, and sugar.
In a separate bowl, beat the eggs before adding in the milk and water. Mix well.
Combine the wet ingredients with the dry ingredients, stirring until there are no lumps.
Fold in the shredded cabbage, green onions, and cooked meat or seafood of your choice.
Preheat a non-stick pan or griddle on medium heat with vegetable oil.
Ladle in the batter, shaping it into a circle.
Cover the pan and cook for 5-7 minutes until the bottom is golden brown.
Use a spatula to carefully flip the pancake and cook the other side for an additional 5-7 minutes.
Once cooked, transfer the pancake to a plate and garnish with the desired toppings.
