Easy Crispy Vegetable Tofu Stir Fry

Ingredients
- 14 ounces of firm tofu
- 2 tbls of vegetable oil
- 2 cloves of garlic, minced
- 1 bell pepper, sliced
- 1 onion, sliced
- 1 large carrot, sliced
- 2 cups of broccoli florets
- 2 tbls of low-sodium soy sauce
- 1 tablespoon of cornstarch mixed with one tablespoon of cold water
- salt and pepper to taste
- 1 teaspoon of sesame seeds (for garnish)

Directions
Press the tofu for 15 minutes to get rid of any excess moisture, then cut into cubes.
Heat a tablespoon of vegetable oil in a large pan over medium heat.
Add the tofu and sear until all sides are golden brown. Once done, remove from the pan and set aside.
In the same pan, add another tablespoon of oil then sauté the garlic until fragrant.
Add the onion, bell pepper, carrot, and broccoli. Stir fry for about 5 minutes or until the vegetables are tender.
In a small bowl, combine the soy sauce and cornstarch mixture. Stir until well combined.
Pour the sauce over the stir-fried vegetables, stirring continuously for a minute until the sauce thickens.
Add in the fried tofu, tossing to coat with the sauce and veggies.
Season with salt and pepper to taste.
Transfer the tofu stir fry into a serving dish, garnish with sesame seeds and serve hot with rice or noodles.
