Directions
Grate the halloumi into a bowl, finely chop the mint leaves and mix them in as well. It's important that the mint is finely chopped to distribute its flavor evenly.
Beat the eggs in a separate bowl and add them to the cheese and mint mixture. Stir well to combine. This recipe works best if the eggs are at room temperature, as they'll mix more easily with the cheese.
Next add in the flour, baking powder, salt, and pepper. You can adjust the amount of salt depending on how salty your halloumi is, remember, it's always easier to add more salt later than remove it. Mix everything together until a dough forms.
Heat some oil in a pan over medium heat. Once the oil is heated, use a spoon to drop spoonfuls of the mixture into the pan. Don't overcrowd the pan as the fritters need space to cook evenly, usually, 3 to 4 at a time is good depending on the size of your pan.
Cook each fritter for about 2-3 minutes on each side, or until they are golden brown. Be patient and let them cook slowly so they're crispy on the outside and cooked through inside.
For the dip, grate cucumber and mix it with yogurt and minced garlic. This dip is a perfect complement to the salty, crispy fritters.
Serve the fritters hot with the cucumber yogurt dip on the side.
