- 1 head cauliflower
- 1⁄2 Cup vegetable stock cube
- 1 tablespoon rapeseed oil
- 1 onion
- 2 cloves garlic
- 1 Cup grated tofu
- 1 red bell pepper
- 1 tablespoon chili powder
- 1 teaspoon dried oregano leaves
- 1 teaspoon ground cumin
- 1⁄4 teaspoon cayenne pepper
- 3⁄4 Cup medium salsa
- 12 taco shells
- 1 Cup shredded lettuce
- 1 avocado
- 1⁄2 Cup shredded cheddar
- plain greek yogurt

1. Step
Add the cauliflower and vegetable broth to a pan and cook for 5 minutes. Move to a bowl.

Now add canola oil, chopped onion, minced garlic, tofu, diced pepper, chili powder, oregano, cumin, and cayenne to the pan. Cook for 2 minutes, then add the cauliflower. Cook for 5 minutes.

Finally, add the salsa and mix well. Fill your taco shells with the cauliflower, and add lettuce, avocado, cheese, and yogurt. Serve and enjoy!
