Easy Authentic Green Thai Curry Recipe

Ingredients
- 2 chicken breasts, cut into-sized cubes
- 2 tbls green Thai curry paste
- 1 can coconut milk
- 1 green bell pepper, sliced
- 1 red bell pepper sliced
- 1 small zucchini, sliced into half-moons
- 1 Cup green trimmed
- 1 Cup basil leaves. torn
- 1 tablespoon fish sauce
- 1 tablespoon brown sugar
- 2 tbls vegetable oil
- salt and pepper to taste

Directions
Heat 2 tablespoons of vegetable oil in a large skillet or wok on medium heat. Add the chicken cubes and cook until browned. Remove and set aside.
In the same skillet, add the green Thai curry paste and cook for 3 minutes until fragrant.
Pour in the coconut milk and stir well, ensuring the curry paste is fully blended with the milk.
Add chicken back into the skillet and stir to combine.
Stir in the sliced bell peppers, zucchini, and green beans. Season with fish sauce and brown sugar.
Allow the curry to simmer for about 10 minutes, until the vegetables are tender and the flavors have melded together.
Add in the torn basil leaves and season with salt if needed.
Remove heat and serve the Green Thai Curry.
