Devils on Horseback Appetizers
This is the perfect dish to serve at gatherings or special occasions, and never fails to impress my guests.

- 18 pitted prunes
- 18 small cubes of sharp cheddar cheese
- 6 slices of bacon, cut into thirds
- 1 Toothpicks
- Maple syrup for glazing
- Black pepper to taste

Start by preheating your oven to 400°F (200°C). I'd recommend getting an oven thermometer if you don't have one. Over time, I've found that oven temperatures can be wildly off and may affect the outcome of your dish.
Place a sliver of cheese inside each prune. Be mindful not to overstuff it, otherwise, the cheese may seep out during baking and create a mess.
Wrap each prune in a piece of the bacon and secure it with a toothpick. The best way to do this is to start at one end of the prune and keep the bacon tight as you wrap. This helps the bacon stay in place during baking.
Arrange the wrapped prunes on a baking sheet lined with parchment paper. I suggest using a baking sheet with edges to catch any cheese or bacon grease that may escape during cooking, making clean up much easier.
Generously glaze each piece with maple syrup, then sprinkle with black pepper. This will give them a more complex, delightful flavor with a balance of sweetness and a kick of spice.
Bake in your preheated oven for about 20 minutes or until the bacon is crispy. For an evenly baked outcome, it's advisable to turn the prunes halfway through the baking period.
Let them cool for a few minutes before serving. This way, the cheese solidifies slightly and the flavor deepens. Just be careful not to let them sit for too long—these are best enjoyed warm!
