Delightful Ginger Beer Boiled Fruit Cake
This Ginger Beer Boiled Fruit Cake is my go-to recipe when I want to impress guests with a unique and flavorful homemade dessert.
Ingredients
- 1 kg of mixed dried fruit
- 1 Cup of ginger beer
- 250 gr of unsalted butter
- 1 Cup of brown sugar
- 1 teaspoon of baking powder
- 2 cups of all-purpose flour
- 4 large eggs
- 2 teaspoon of mixed spices (cinnamon, nutmeg and cloves)
- 1 teaspoon of Vanilla Extract

Directions
First, in a large pot, combine the mixed dried fruit, ginger beer, unsalted butter, and brown sugar. Bring this mixture to a boil over medium heat. Once it starts boiling, reduce the heat to low and let it simmer for about 10 minutes. Stir occasionally to avoid burning the fruits.
After simmering, remove the pot from the heat and let it cool.
Preheat your oven to 160°C (320°F) and grease a cake tin with a bit of butter.
Once the fruit mixture is cooled, beat in the four eggs one at a time, making sure each one is well integrated before adding the next one. Add the vanilla extract and stir well.
In a separate bowl, mix the flour, baking powder, and the mixed spices together. Then stir this into the cooled fruit mixture until thoroughly combined.
Pour the cake batter into your prepared cake tin and bake in your preheated oven for about 1.5 hours or until a skewer inserted in the middle comes out clean.
Once cooked, remove the cake from the oven and allow it to cool in the cake tin. When cooled, remove it from the tin and wrap it in foil to keep it moist until serving.
