Delicious beans with chorizo
Beans with chorizo is a very traditional dish in my house. I always love to prepare it during winter days because its flavor and warmth make us feel at home. Although it is a fairly simple recipe, the secret is in the seasoning and the choice of good ingredients. But the great thing about this dish, besides its delicious flavor, is its versatility - it can be served as a main dish or as a side dish!
Ingredients
- 500 grams Bean
- 200 grams Of chorizo
- 1 large onion
- 2 clove garlic
- 1 red bell pepper
- 1 green bell pepper
- salt and pepper to taste
- olive oil
- sweet paprika
- 1 sheet Laurel
- 1 liter Of water

First, clean and cut the beans into small pieces. For this dish, I recommend that they are not too large so that they cook well and are not hard.
Cut the onion, peppers and garlic cloves into small cubes. This size is ideal so that they are well distributed in the preparation and each bite is full of flavor.
In a large saucepan, add a drizzle of olive oil and add the onion, peppers and minced garlic. Cook over medium heat until well browned.
While the vegetables are cooking, cut the chorizo into slices. It is important that they are neither too thick nor too thin so that they cook evenly.
Add the chorizo to the casserole with the vegetables. Add the bay leaf and season with salt, pepper and sweet paprika. The latter will give a particular flavor and color to the preparation.
Add the beans and stir well to mix with the other ingredients. Cook for a few minutes.
Add water and bring to a boil. Reduce heat and cook for 40 minutes or until beans are tender. This is a very important point, you have to be patient and careful not to overcook and end up with very soft beans.
Finally, adjust the seasoning and serve hot.
