Crispy Steamed Chinese Pork Dumplings

Ingredients
- 1⁄2 lb ground pork
- 1 Cup shredded cabbage
- 2 cloves garlic, finely minced
- 2 spring onions, finely chopped
- 1 teaspoon soy sauce
- 1 tablespoon sesame oil
- salt and pepper to taste
- 1 Package dumpling or wonton wrappers
- Water for sealing the wrappers
- 21⁄2 tbls Vegetable oil for frying
- Soy sauce or vinegar for dipping

In a medium-sized bowl, mix the ground pork, shredded cabbage, minced garlic, chopped spring onions, soy sauce, sesame oil, salt, and pepper. Stir well until the mixture is well combined.
Lay out one dumpling wrapper on your work surface. Place a teaspoon of pork mixture in the center of the wrapper.
Wet your finger in water and moisten the edges of the wrapper to help it seal better.
Fold the wrapper over the filling to create a half-moon shape, crimping the edges to seal it.
Repeat these steps with the rest of the wrappers and filling.
Heat the vegetable oil over medium-high heat in a large flat-bottomed pan. Place the dumplings in the pan, making sure not to overcrowd it.
Fry the dumplings for 2-3 minutes until the bottoms are golden brown.
Add about 1/2 cup of water into the pan and cover immediately to steam the dumplings. Let the dumplings steam for about 7-8 minutes or until the water has evaporated.
Once they are done, serve them immediately with soy sauce or vinegar for dipping.
