Ingredients
- 4 Fillets of a white fish of your choice (cod, haddock or tilapia are recommended)
- salt and black pepper to taste
- 1⁄2 Cup all-purpose flour
- 2 eggs, beaten
- 1 Cup Panko breadcrumbs
- 2 teaspoons of any seasoning blend
- Olive oil for frying

Rinse the fish fillets and pat them dry with a paper towel. Season both sides with salt and pepper. Set aside.
Arrange your coating station: In one shallow dish, spread out the flour. In a second shallow dish, pour the beaten eggs. In a third shallow dish, combine the panko breadcrumbs with the seasoning blend.
Dip each fillet first in the flour, ensuring it is fully coated, then shake off any excess. Next, dip the fillet in the beaten eggs, then finally coat it well in the panko breadcrumb mixture, pressing to adhere if necessary.
In a large fry pan, heat the olive oil over medium-high heat. Once hot, add the breaded fillets. Fry for about 4 minutes on each side (adjusting time for thicker fillets), or until the fish is golden brown and cooked through.
