Christmas Oven Baked Salmon
A timeless favourite for family Christmas dinners, this Christmas Baked Salmon is a dish that never disappoints.
Ingredients
- 2 lbs fresh salmon fillet
- 1 Cup of honey
- 3 cloves minced garlic
- Zest and juice of one orange
- Zest and juice of one lemon
- 2 tbls of olive oil
- Fresh rosemary sprigs
- salt and pepper to taste

Preheat the oven to 375°F (190°C), a temperature I have found perfect for baking salmon - it cooks the fish evenly and maintains its juicy texture.
Place the salmon fillet on a greased baking sheet.
Prepare your glaze by combining honey, minced garlic, orange juice and zest, lemon juice and zest, and olive oil in a bowl. Whisk until they attain a smooth consistency- this ensures the flavours seep properly into every cut of the salmon.
Liberally season your salmon with salt and pepper. Pause and be careful not to over-salt it - remember, the glaze also has its flavours.
Slowly pour the honey-citrus glaze over the salmon, ensuring it's completely covered. From my vast experience, drenching the salmon in this glaze gives an irresistibly sweet-tangy taste that makes each bite a delight.
Place sprigs of fresh rosemary on top of the salmon. Herbs like rosemary give an added festive touch with its aroma and taste.
Bake the salmon in the preheated oven for 25-30 minutes or until the salmon flakes easily with a fork.
Before serving, let it rest for about 5 minutes. It cools down a bit and allows for easier slicing, giving each plate an equal, satisfying piece.
