Chinese sweet and sour pork
This is one of the most popular Chinese dishes in Western countries. There are different versions, the most popular are Tang Cu Li Ji" (糖醋里脊) and "Gu Lao Rou" (咕噜肉), the last one has pineapple in its preparation. In any form, it's a delicious meal.
Ingredients
Marinated
- 500 g pork tenderloin
- 1 egg
- 1 tablespoon light soy sauce
- 1 tablespoon Chinese rice wine
- salt
- white pepper
Sweet and sour sauce
- 1⁄2 Cup water
- 3 tablespoon ketchup
- 2 tablespoon light soy sauce
- 2 tablespoon rice vinegar
- 2 tablespoon sugar
- 1 pinch salt
- cornstarch dissolved in water
Batter
- 50 g Wheat flour
- 50 g corn flour
Decoration
- sesame seed
Frying
- vegetable oil

Directions
Cut the pork into strips. In a bowl, add light soy sauce, Chinese rice wine, one egg, salt and white pepper.
Mix well, cover and set aside for 30 minutes.
Dredge the pork in a mixture of half flour and half cornflour.
Fry the pork in vegetable oil over medium heat for 4 to 5 minutes. Strain, removing excess fat.
Increase the heat and fry the pork again until well browned and crispy.
In a frying pan with a drizzle of vegetable oil, fry the garlic.
Add water, rice vinegar, ketchup, light soy sauce, sugar, and salt. Then, mix well.
Add a mixture of cornstarch and water to thicken the sauce.
Add the pork and mix well.
Serve immediately on a plate and garnish the pork with toasted sesame seeds. The perfect accompaniment is freshly cooked white rice.
