Chicken Satay Noodle Salad with Peanut Sauce

- 400 g chicken breast, sliced
- 2 tbls vegetable oil
- 2 cloves garlic, minced
- 1 large red bell pepper, sliced
- 2 large carrots, julienned
- 100 g sugar snap peas
- 200 g rice noodles
- 4 tbls of satay sauce
- salt and pepper to taste
- Fresh coriander leaves and chopped peanuts for garnish
For the Satay Sauce:
- 1⁄2 Cup smooth peanut butter
- 1⁄4 Cup soy sauce
- 2 tbls sweet chilli sauce
- 1 tablespoon brown sugar
- Juice of one lime

Directions
Start by preparing the satay sauce. Combine peanut butter, soy sauce, sweet chilli sauce, brown sugar and lime juice in a bowl. Stir until smooth and set aside.
Boil the rice noodles as per the instructions on the package and drain once cooked. Keep aside.
In a large pan or wok, heat 2 tablespoons of oil over medium heat. Add the garlic and cook until fragrant.
Add chicken to the pan and cook until it's no longer pink. Season with salt and pepper.
Add red bell pepper, carrots, and snap peas to the pan. Stir fry for about 4- 5 minutes or until veggies are tender-crisp.
Add the cooked noodles to the chicken and veggies. Pour the satay sauce over the noodles. Toss everything together until well combined and heated through.
Serve hot, garnished with coriander leaves and chopped peanuts. Enjoy your delicious Chicken Satay Noodles!
