Chicken breast with vegetable salad
Quick and healthy chicken breast with vegetable salad. You can choose the vegetables according to your taste or what you have available at the moment.
Ingredients
- 4 pcs chicken breast
- 1 kl Salts
- 1⁄2 kl ground black pepper
- 2 tablespoon olive oil
- 1 head Green salad
- 2 pcs tomatoes
- 1 pcs paprika
- 1 salad cucumber
- 1 pcs red onion
- 2 tablespoon lemon juice

Directions
Rinse the chicken breasts under cold water and pat dry. Then salt and pepper them on both sides. From my own experience, I recommend letting the meat rest for a while to allow the flavours to meld properly.
Heat the olive oil in a frying pan and add the chicken breasts. Roast them for about 8 minutes on one side and then flip them over and roast for another 7 minutes.
Wash the peppers, tomatoes, cucumber and onion and cut into pieces.
In a bowl, mix lemon juice, olive oil, salt and pepper to create a simple dressing.
Add the dressing to the bowl with the chopped vegetables and stir.
Serve chicken breast with vegetable salad.
