Cake with cherries and mascarpone cream
This cake is perfect for various occasions, not just for a simple dessert. I have had many occasions to prepare it and each time it came out perfectly. I hope my experience and tips will help you in its preparation.
Ingredients
- 200 g Digestive cookies
- 100 g butter
- 500 g cherries
- 250 g sugar
- 500 g mascarpone cheese
- 200 ml cream
- 2 spoons Gelatines
- 3 spoons Waters
- Cherries for decoration
- cherry jam

Crush the cookies into fine crumbs. My advice: it's easier to do this using a blender.
In a pot melt the butter, add the crumbled cookies to it and mix well. Spread the mixture prepared this way on the bottom of the cake pan and press it with your hand so that it is even and firm. Put the mold in the refrigerator for 30 minutes.
In the meantime, prepare the cherries. Drain them from the juice, then mix them with sugar. Cook over low heat for about 20 minutes until the sugar dissolves. Set aside to cool.
In a bowl, mix mascarpone cheese and cream cheese. Dissolve the gelatin in hot water and add to the mixture, stirring well to avoid lumps.
Put the cake in the refrigerator for at least 1 hour to let the mixture set well.
Spread the cream with cherry jam and decorate with cherries.
