- 400 g chicken breasts
- 2 tablespoon peri peri seasoning
- 2 tablespoon olive oil
- 20 g unsalted butter
- 1 red bell pepper
- 1 red onion
- 2 cloves garlic
- 1 tablespoon tomato paste
- 200 ml chicken stock
- 200 ml double cream
- 6 letters basil
- 30 g parmesan

1. Step
Cut up the chicken into cubes and place in a bowl with the peri peri seasoning. Mix well and let sit for 30 minutes. Heat oil and melt butter in a pan. Add the chicken and fry for 3-5 minutes. Set aside.

2. Step
Add olive oil to the pan. Stir-fry pepper for 2-3 minutes, add onion and cook for 1-2 minutes, add garlic and cook for another minute.

Add tomato paste and chicken stock. Bring to a simmer. Add the double cream, chicken, basil, and parmesan. Mix well and set aside.
