Ingredients
- 8 ounces linguine pasta
- 2 chicken breasts, boneless, skinless
- Salt and pepper, to taste
- 2 tbls oil, divided
- 3 cloves garlic, minced
- 1 Cup basil leaves, packed
- 1⁄4 Cup pine nuts
- 1⁄4 Cup parmesan
- 1⁄4 Cup virgin olive oil
- red pepper flakes (optional)
- Cherry tomatoes and fresh basil, for garnish

Cook the linguine pasta according to package instructions until al dente. Drain and set aside.
Meanwhile, season the chicken breasts with salt and pepper on both sides.
In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the chicken breasts and cook for about 8 minutes per side, until cooked. Remove the chicken from the skillet and let it rest. Slice chicken into thin strips.
In a food processor or blender, combine the minced garlic, basil leaves, pine nuts, grated Parmesan cheese, and red flakes (if using). Pulse until well combined.
Gradually add the extra-virgin olive oil. Continue to blend until the mixture forms a smooth and creamy pesto sauce. Adjust seasoning with salt and pepper if needed.
