- 1 lb fresh mushrooms (wild or cultivated)
- 1 medium onion, chopped
- 4 cups vegetable broth
- 1 Cup heavy cream
- 2 tablespoon butter
- 2 tablespoon flour
- 1 teaspoon thyme
- Salt and pepper, to taste
- chopped parsley, for garnish

1. Step
Melt butter on medium heat. Add onion and garlic and sauté for 3-4 minutes or until softened.

Add mushrooms and cook for 5-6 minutes or until they release their juice.

Pour vegetable broth and stir well, making sure there are no lumps. Bring to a boil and let simmer for 10-15 minutes or until the mushrooms are tender.

Using an immersion blender or transferring to a blender, puree the soup until smooth.

Return the soup to the pot and stir in heavy cream and thyme. Bring back to a boil and cook for an additional 5-7 minutes.

Season with salt and pepper to taste. Garnish with parsley, serve, and enjoy!
