Ingredients
- 1 large carrot, grated
- 1 large zucchini, grated
- 1 red bell pepper, diced
- 1 onion, diced
- 2 cloves of garlic, minced
- 1 Cup of grated cheddar cheese
- 1⁄2 Cup of self-rising flour
- 1⁄2 Cup of olive oil
- 5 eggs
- salt and pepper to taste
- Fresh herbs for garnish (optional)

Preheat the oven to 180 degrees Celsius (350 degrees Fahrenheit) and line a baking dish with parchment paper.
In a large bowl, mix the grated carrot, zucchini, bell pepper, onion, garlic, and cheese.
In a separate bowl, whisk the eggs, oil, flour, and season with salt and pepper.
Pour the egg mixture into the vegetable mixture. Stir until all ingredients are combined.
Pour the combined mixture into the prepared baking dish.
