Beetroot cake
A delicious cake that is baked from beetroot with mascarpone cream.
Ingredients
On the road:
- 500 g beetroot
- 200 g sugar
- 200 ml sunflower oil
- 2 pcs Eggs
- 250 g Plain flour
- 11⁄2 spoons baking powder
- pinch of salt
For the cream:
- 100 g mascarpone
- 100 g sour cream
- 50 g confectionery sugar
- 1 pcs vanilla sugar

Directions
First peel the beetroot. Grate it on a coarse grater. Then mix it with the sugar and leave it to rest for a while. Then add the oil and eggs and mix thoroughly.
In another bowl, mix together the flour, vanilla sugar, baking powder and salt.
Then add the dry ingredients to the beetroot and mix everything thoroughly to bring the dough together.
Fill a greased cake tin and bake in a preheated oven at 180 °C for about an hour.
Meanwhile, prepare the filling. Beat the mascarpone, add the other ingredients and mix thoroughly.
When the cake is done and a little cooled, cut it in half.
Brush with cream and sprinkle with icing sugar.
Serve with whipped cream and your favourite fruit.
